VEAL TANDOORI WITH PRESIDENT CHEDDAR

MATERIALS

1 package of President Cheddar (220 g)
1.5 kg bone-in beef ribs
700 ml Riviera olive oil
4 sprigs of rosemary
4 sprigs of fresh thyme
Sea salt



FOR CHEDDAR SAUCE

150 g shredded President Cheddar
1 teacup of cream

FOR CARAMELIZED ONION

2 red onion (chopped in crescent shape)
1 tablespoon of brown sugar

ON TOP OF THE SERVICE

Chopped garlic chive

PREPARATION

To prepare the tandoori, place the ribs in a deep pyrex dish or metal ovenware. Completely cover it with Riviera olive oil. Add rosemary and thyme.  Sprinkle with sea salt. Cover firmly with a foil paper. Bake in a 130 degree oven (low temperature) for about 4 to 6 hours. Meats should be perfectly tender. When it cools down, remove the meat from bones and fat. Tear the meat apart strand by strand.

To prepare caramelized onions, sauté the onions in olive oil, and when the color starts to change, add brown sugar.  When it achieves its brown color and begin to stick to the pan, take it off the stove and let it cool.

To prepare the sauce, boil the cream and add President Cheddar Cheese. You can take it off the stove after cooking President Cheddar Cheese is melted until you can cook for a short time after you take it off the stove.

Serve with in pita bread or with caramelized onions on a serving plate.

Sprinkle with chopped chives.
